Gingerbread, Orange and Saffron

Christmas is right around the corner, and I’m thrilled — it’s truly my favourite holiday. One of my absolute favourite this time of year is soft gingerbread cake. Strangely enough, I’m not even sure my family knows that… but anyway, it felt like the perfect moment to build a tall cake on a gingerbread base. And it did not disappoint. This is d.i.v.i.n.e. (If you’re a gingerbread fan, that is. Probably a nightmare otherwise. 😅)
Saffron is another classic Christmas spice, so of course I had to include it. I paired it with white chocolate and tada — a saffron ganache that practically lights up the room with its colour.

Speaking of bright colours, orange certainly brings its own glow. It also matches the gingerbread sponges beautifully, so I’d say I nailed the colour palette this time. And that touch of tanginess from the orange curd? It balances the sweetness of the ganache perfectly. I’m honestly not convinced one slice will be enough…
And the wool balls — what do we think? I find them pretty adorable, almost like tiny Christmas ornaments. That’s the vibe anyway I was going for when I added them. I also found some sugar-coated red berries that looked wonderfully festive and “Christmas-y.” I did go a little wild with the colours overall decoration wise, but a colourful cake is a cute cake if you ask me. 🧡
