Fruity cakes

Raspberry and Lemon Meringue 

Four layers of raspberry sponge, filled with lemon curd and soft, sweet meringue. All covered with a vanilla buttercream of which I coloured some in order to make the abstract design.​

   Decorations used: macarons, meringue kisses, dried lemon slices, a few rice paper sails and sprinkles 💛

Pear, Pistachio and Cardamom

Soft vanilla and cardamom sponges layered with a pear compote — gently spiced with a little bit more cardamom. Between each layer there's also a smooth pistachio buttercream with generous swirls of pistachio spread. The whole cake is then wrapped in that silky Swiss meringue buttercream flavoured with pistachio spread. This one's definitely a winner!

   For the decorations: meringue kisses, a few shiny isomalt pieces, quite the amount of buttercream, and some baby’s breath to finish it all off 💚

Blueberry and Lemon Vanilla

Four layers of vanilla sponge, gently folded with blueberries to create both colour, a little sweetness and moisture. Between each tier, a smooth vanilla mousse meets either a thin layer of lemon curd or equally amount of blueberry jam. The cake is then covered in a sweet vanilla buttercream.​

   For the finish: crisp macarons, a few slices of dried lemon, a single meringue, and quite an amount of a colourful sprinkles and rose gold shimmer. In my opinion - both elegant and playful 💙

Passionfruit, Raspberry and Almond/Coconut

Soft vanilla and raspberry sponges layered with a either a passionfruit mousse with raspberry cured or a Ruby chocolate ganache with an almond and roasted coconut crunch. The whole cake is wrapped in a passionfruit ganache and Swiss meringue buttercream flavoured with that ganache. I'm gonna keep creating this flavour combo for sure!

   For the decorations: macarons, meringues, sugarpaste flowers and giraff, decorative balls, edible gold leaves, sprinkle, shimmer and quite the amount of buttercream 💛

Pistachio and Lemon

Three layers of vanilla sponge, spiced with ground cardamom. Between the first layers, you’ll find a lemon mousse with a lemon curd insert. The second filling features a pistachio ganache paired with a pistachio crunch, lightly flavoured with fresh lemon zest. The cake is then covered in a smooth vanilla and pistachio buttercream.

  To finish: macarons, meringue kisses, matching decorative balls, a crêpe paper flower, a few delicate wafer paper flowers — and plenty of buttercream, sprinkles, and shimmer 💚
