Carrot Cake with a touch of Lime

This one’s a real flavour hug 🧡

 

Carrot cake is honestly one of my top three flavours — I never get tired of those warm spices and that soft, cozy texture. And I have to say, it’s the lime that really makes this one special. That little burst of freshness cuts through the sweetness just perfectly and makes every bite feel light and vibrant.

Honestly, I’ve made carrot cake many, many times before — but never a multi-layer cake built entirely on a carrot cake base. And let me tell you, this will not be the last time. Oh boy, I love this! And lime in the frosting!? I wish I could take credit for that idea, but it isn’t originally mine. Still, it’s such a clever twist — it gives you that little lift of freshness you sometimes (or let’s be real, often) crave in a cake.

Okay, can we please talk about that isomalt sail? I’ve barely worked with isomalt before, and honestly… I’ve clearly been missing out. My Instagram feed is now overflowing with isomalt creations and variations — and I’m not complaining ☺️
