Pistachio and Lemon

My DEAR friend Ellen has turned 40 💐

We only met almost two years ago, but you’ve already become a dear friend — someone I truly adore and look up to. When I first started at the gym where we met, I was in awe of your strength. And I still am — both at the gym and in life.

​

It was so, so much fun making your fortieth birthday cake! And I’m still incredibly honoured that you trusted my baking skills for your big celebration that night. You asked for a light pink and purple cake and then gave me free rein to create as I pleased — my favourite kind of order.

​

We also agreed to incorporate light green, since the pistachio naturally gives the buttercream that beautiful shade. And just like that — a grown-up kids’ birthday party became my inspiration 🥳 Cute, but in a more adult way. Hopefully that’s the vibe you’re getting!

​

Flavour-wise, pistachio isn’t everyone’s cup of tea — but I was thrilled. It’s definitely one of mine. Especially paired with lemon: fresh and nutty all in one. To enhance the flavours even more, I added just enough ground cardamom to the sponges to make everything pop a little extra. And I truly think it was a success.
