Blueberry and Lemon Vanilla

As an adult, I’ve grown into a strong preference for lemon in sweet treats — especially when lemon curd is involved. Honestly, spreading a layer of lemon curd all by itself inside a cake is a splendid idea. But pairing it with another flavour, like in this cake, is even better. Lemon curd can be a little tangy on its own, so I wanted a partner that would soften it. Now, vanilla might sound a bit “vanilla” (ha, see what I did there?), but when it marries lemon, it absolutely isn’t. Whatever the reason, I’m very glad it works!

Speaking of flavours that work like peas in a pod — lemon and blueberry! Please tell me you’re with me on this one!? I’d say it’s a combo that charms both small children and the bigger ones… also known as adults. 😉 I’d describe this cake as a kind one — not shouting loudly for attention, but still kinda hard to resist. You want it around. You probably wouldn’t mind if it stayed a little longer. Am I right?

 

And to keep you convinced: this cake is perfectly moist. I do have a little secret that explains why… but actually, I think I’ll hold onto that one for just a bit longer. Sorry, but I need to keep you wanting to come back for more, don’t I? What I can tell you is this: a moist base, blueberries folded through, and a soft vanilla mousse between the layers definitely puts this cake in the “lighter” cake category. It’s not as heavy as cakes filled with buttercream — which means you’ll absolutely come back for seconds. Quite genius, if I say so myself.

Now, why am I so obsessed with sprinkles? Is it the colours? The endless variety? The way they make me smile? Their elegance, their prettiness, the tiny bit of class they bring to a cake? I suppose the reason changes depending on the cake — but if I had to choose, I’d say the number one reason is simply that they make me happy. And I hope that feeling carries through the cake. Even if it’s just for a split second, if looking at a cake I’ve made brings a smile to your face, then all the work is worth it.
